Happy Valentine's Day!!

I walk into work today and find pink roses on my desk. The owner bought all the ladies in the office roses...how sweet! Then I also find donuts in the cafeteria and some sort of chocolate cake on my desk. Are you kidding me?!? Some holidays make it so difficult to stick to your diet! That or my coworkers are sabotaging the Body Transformation going on in my office, hmmm... 

In keeping with the spirit of sweets for Valentine's Day, I figured I would post one of my favorite dessert recipes: Raspberry Romanoff. Now, the original recipe has a higher calorie and fat count, but I came across Skinny Berry Romanoff and it's delicious too!




Skinny Berries Romanoff Servings: 5 • S Size: about 5 strawberries + 2 tbsp cream Old Points: 1 pt Points+: 2 pts Calories: 77.2 • Fat: 2.4g Protein: 2.1 g Carb: 12.8 g Fiber: 2.1 g
  • 16 oz assorted berries, washed and cut
  • 4 oz low fat sour cream
  • 2 tbsp brown sugar
Combine sour cream and brown sugar. Place about five strawberries in each glass and drizzle each with 2 tablespoons of cream sauce.

Now, you can make this with any berry of your choice. I happen to be a huge lover of raspberries not only because they taste amazing, but also they are great sources of potassium, dietary fiber and antioxidants (lots of vitamins!) to help metabolism, strengthen the immune system, maintain a healthy bladder and most importantly, they are low in calories!

This recipe is super easy and quick to make so impress that special person in your life with this absolutely tasty dessert tonight :) It's sure to get you some "brownie" points!

But, if you're looking to splurge and go all out regardless of your diet, fat, and calories, here's the original recipe, enjoy!! 

Makes 8 –10 servings
1 cup plain low-fat Greek yogurt (such as Fage 2%)
1 tablespoon honey

1/2 teaspoon vanilla bean paste (or vanilla extract)
1/4 cup orange-flavored liqueur (such as Grand Marnier)
1 cup heavy cream
2 pints fresh raspberries (about 4 cups)
Granulated raw sugar for garnish (optional)

Mix the yogurt with the honey, vanilla and liqueur. Whip the chilled cream in a mixing bowl until stiff peaks form. Fold the cream into the yogurt until thoroughly combined. Cover and chill until ready to serve. Mixture hold wells for up to several hours. To serve, spoon the yogurt cream mixture into dishes or a glass, such as a wine or cocktail glass. Top with the raspberries and then sprinkle with the granulated raw sugar.
