Well I've found the perfect recipe for Pumpkin Raisin Cookies in which each cookie only has 60 calories and there's not oil, eggs or butter involved in the baking process! You might be wondering how this is possible, well applesauce is a great substitute for oil and butter. But you'll have to note that these cookies are not as moist due to the fact they are missing your main baking ingredients, but they are definitely tasty nonetheless!
Prep time: 5 minutes
Cook time: 15-18 minutes
Yields: About 32 cookies
Ingredients:
1 cup of whole wheat flour
1 cup of all purpose flour
1 cup of white sugar
1 teaspoon baking powder
1 teaspoon baking soda
2 teaspoons of cinnamon
1/2 cup raisins
1/2 cup of unsweetened apple sauce
1 teaspoon of vanilla extract
1 cup of canned pumpkin (not pumpkin pie mix)
Cooking spray
Directions:
Preheat oven to 350. Grease a cookie sheet with cooking spray.
Combine sugar, applesauce, pumpkin and vanilla extract together.
In another bowl, mix flours, baking soda, baking powder, raisins and cinnamon. Once mixed, add it all together.
Using a tablespoon, scoop little blobs onto the baking sheet and bake for 15 – 18 minutes, or until browned.
